LOL my boss would rather go to Arizona. The nice and mild weather you speak of is mostly found in south/central California.
Oregon west of the cascades is cold, rainy, and windy most the year, but snows rarely and summer is hot (somewhat humid heat) except the coast... always windy/cold there. In the east, it's hot summers and cold/snowy winters.
In short, I'd visit during end of August and January before deciding (those are the extremes, summer and winter). Bend has resorts to stay at and is probably your best bet and is popular for retirees so I'm sure they have the things you listed. Also, Oregon has an estate tax, so talk to someone about that if you plan to retire here.
