I wouldn't worry about it. You will make the transition fine. It's seems MN nice is such a phenomenon that any possible experience that you have with a person that is somewhat superficial is ascribed to being MN nice. I am from Brooklyn, NY and moved to St. Paul about 10 years ago. People here talk about superficial niceness and not inviting you in for more? I spent the 80s and 90s in Manhattan in the same apartment and barely knew my neighbor. They were pleasant in the hall, but didn't invite me in for more. Are these Minnesotans that somehow moved to NYC? There may be some truth to MN nice, but I think it is more of a US issue than Minnesota. I was mugged 3 times in NYC and none in Minneapolis, so in my mind, I'm already ahead!
As an East Coaster, this was the best move I ever made for my family and I. My son is in a magnate school in St. Paul and my wife and I are happy with the relocation. There is a lot of diversity in the St. Paul school my son attends, as there are children from all over the world. I find it a very open, cultural, and intellectual town. I am certain you will be able to adapt here; it just may take a bit of time. I would join a Puerto Rican club. There are many diverse clubs to join if you look on facebook. Yes, it is a bit colder, but not that much worse than NY. However, it's way colder than Puerto Rico! You just need to dress warmer.
